BERRIED TREASURE
Crust:
1.5 cups graham crackers crumbs (1.5 sleeves of graham crackers crushed)
1/2 cup sugar
1/3 cup butter - melted
Combine all ingredients in a mixing bowl and mix well. Press firmly in a 9x13 baking dish and bake for 8 minutes at 350. Cool (you can stick it in the fridge to speed up the process)
Put the graham crackers into a large ziploc bag. Use a rolling pin or wine bottle to crush. |

Filling:
One 8 oz. cream cheese - softened
1/4 cup of sugar
2 T plus 2.5 cups of cold milk
16 oz. cool whip - thawed
1 pint of strawberries – halved
1 pint blueberries (you can use any kind of berry you want)
6.8 oz vanilla instant pudding (I used two packages of the 3.4 oz boxes)
Beat cream cheese with 1/4 cup sugar and 2 T of milk until smooth; fold in 1/2 of Cool Whip.
Spread this over the already baked and cooled crust and arrange the strawberries (and other berries if you want) on top as the picture below.
Mix the pudding packages (6.8 oz total) and 2.5 cups of milk; beat 1-2 minutes, or until pudding consistency.
Use two 3.4 oz instant vanilla pudding packets with 2.5 cups milk. |
If can you notice here, the mix is still very liquidy. Just keep stirring until it is a pudding consistency. This could take anywhere from 1-4 minutes. |

Pour the pudding mixture over the strawberries/berries and chill for several hours or overnight.
Spread with remaining Cool Whip before serving. Garnish with berries if desired.

DeleteHi there! This picture with the berries is about halfway through the process. I forgot to take a picture of the final product probably because its so good that everyone just wants to dig in right away! The pudding then cool whip go on top of the berries, but you can always garnish with berries for some extra color.
ReplyDeleteDo you add an additional 2 1/2 cups milk to the already prepared instant pudding, or does the 2 1/2 cups milk refer to what you use to make the pudding itself?

ReplyDeleteYou want to add the 2.5 cups of milk with the 6 oz of instant pudding powder not a pudding that's been prepared yet. Hope this helps!
ReplyDeleteHi! You had mentioned in the recipe that you poured the vanilla pudding over your fruit then chilled it, but your picture has the berries on top. Do you put more berries on top of the pudding or pour in all the filling before putting berries on the top..?

ReplyDeleteHi there. I'm sorry that this didn't turn out for you. Did you use 2 boxes of instant pudding? Each box is 3.4 oz, so you need 2. I made the mistake once of only getting one box then had to run back to the store in the middle of the process. Ugh! ReplyDeleteI had put 7oz of already made pudding in a bowl and mixed it with the milk and it never thickened, I drained it out and was so nervous that I ruined it but it still tasted great! Im going to try it again also....hoping this time it works cuz people want me to share the receipe!

ReplyDeletei jist made this and when i mixed the 7 oz of pudding mix with 2.5 cups of milk it came out cake like....was i supposed to make the pudding first then add another 2.5 cuos of milk?
ReplyDeleteHi there. I'm sorry to hear that you had some trouble with this. You are supposed to mix 2 pudding packets (3.4 oz + 3.4oz) with a total of 2.5 cups of milk. You don't need to make the pudding and then add 2.5 cups of milk. I imagine that would make it very soupy. I hope you try this again, because once you've perfected the pudding part, it's such a delicious dessert!

But I have to say these directions aren't very good...they are all over the place...I highly suggest printing this out, then putting it into a step by step format. Otherwise you'll unecessarily spend a lot of frustrating time trying to decipher the above directions

DeleteI thought the directions were great! Tried it and it looks like it is going to turn out. Havent eaten it yet---tomorrow. I was wondering if you could use already prepared vanilla pudding and forget the milk and preparing the pudding mixture? When you mix the boxes with the 2.5 cups of milk, it comes out in pudding consistency so it seems like that would work. Just thinkin. Thanks for the recipe. Good job.

ReplyDeleteHi Sara! I've never tried freezing this but I would be hesitant to do so. I feel like the graham cracker crust would get soggy when it was thawed out. It never hurts to try it, but I recommend making it and eating it within a day or two!
DeleteThis was DELICIOUS! If you want a hit dish at a party, make this dish. My boyfriend and I ate the first batch in a couple of days and the second batch was a huge hit at his family party.
ReplyDeleteThe sugar content did gave me a stomach ache, though. (For an altered recipe, continue reading.) Next time, instead of mixing sugar, cream cheese, and cool whip for the middle layer, I will simply mix cream cheese and marshmallow fluff (a dip recipe my mom makes for strawberries). The extra 1/4 cup of sugar is definitely not needed. I'll probably have to cut the sugar in the crust as well by half. Other than that, I could not get enough of this stuff!
The pudding didn't become the right consistency because the milk wasn't cold enough. This can be remedied quickly by using a cold metal bowl to mix the pudding. Two more options are to put the mixers in the freezer to make them cold and/or submerge the container with the 2.5 cups of milk in a bowl filled with ice.

ReplyDeleteMade this for Memorial Day and everyone enjoyed it. Usually I make a truffle using similar ingredients but everyone seemed to like the slight crunch graham of the cracker crust. I will be making this again. :)
